Tomato, squash & spinach curry

Ingredients
1 large onion, sliced2 tbsp madras curry paste500g butternut squash, chunked5 tomatoes, roughly chopped
Directions
Cook the onion in the oil for 5 mins until softened. Add the curry paste & cook for 3 mins. Add squash, tomatoes and 200ml water, stir.
Cover & simmer for 15 mins, stir through the spinach. Season & serve
