1 aubergine/eggplant1tsp of EVOOo.5tbsp Tahini2 cloves of Garlic, minced1tsp toasted cumin seeds1tsp lemon juice (optional)Dash of SaltFresh Parsley, chopped (optional)
1. Hold the aubergine over an open gas hob flam (or bake it) until the skin blackens and the flesh softens. DO NOT SKIP THIS STEP!! This is an important step to get that smokey flavour.
2. Place the aubergine on the side to cool and lightly toast the cumin seeds in a dry frying pan to release the flavour.
3. Cut open the aubergine, scrape the flesh from the skin and place in a food processor.
4. Add all of the other ingredients and whizz.
5. Serve with parsley if required and a drizzle of olive oil (not included in the calorie count.)
