roasted butternut squash couscous

Ingredients
1 c pearl couscous1 1/4 c veg or chicken stock1 T olive oil1 butternut squash, peeled and chopped2 cloves garliccashews 25-30 arugala
Directions
boil couscous in stock according to pkg directions, drizzle 1 T olive oil over cut squash and whole garlic cloves and put on roasting pan. Roast in 400 degree oven for 20 min. Add cashews to squash for additional 10 min. When couscous is done add squash and garlic. mix in arugala just before serving
