crockpot salmon with camerlized onions and carots

Ingredients
2 tbsp olive oil2 tbsp butter1 cup chopped onion2 cups carrots (I chop them)1 tbsp minced garlicsalmon filets (i used 5 with an average wight of 3 oz)spices - I used celtic sea salt, parsley, oregano, basil, chives and black pepper
Directions
place olive oil, butter onions, carots and carlic in crock pot. Cook on low for 6-7 hours, until vegetables begin to carmelize.
Add filets and sprinkle with combination of spice. Cook on low for 1-2 hours until salmon flakes well

Serving Size: 3 oz filet with juices
