Grilled fish with lemon and cheese topping

Ingredients
1 egg1 Tbsp olive oil1 tsp finely grated lemon rind1 Tbsp lemon juice1/2 tsp prepared mustard1 Tbsp fresh chopped parsleyTopping:2 slices whole meal bread - crumbed1 tsp finely grated lemon rind 1/3 cup grated cheddar cheese 2 Tbs finely chopped pickles or capers18 oz Tilapia
Directions
Spray a baking dish with non stick spray, layer fish fillets.
In a small bowl whisk egg, olive oil, lemon rind and juice, mustard and parsley, poor over the fish.
Mix all the topping ingredients and sprinkle over fish mixture.
Set fish under medium grill, not too close for 10-15 minutes.
