Sue's Vegan Minestrone

Ingredients
1 cup dried white beans1 tablespoon olive oil2 carrots - peeled and chopped2 medium onions - peeled and chopped3 stalks celery - chopped6 purple baby potatoes - sliced2 cloves garlic - minced3 tomatoes - chopped1/2 bell pepper - any color - chopped6 mushrooms - chopped3 ounces whole wheat pasta - elbowwater
Directions
soak beans for at least 8 hours - rinse and place in crockpot and cook until very tender. Do not add salt until beans are tender. Toss all the chopped vegetables in the olive oil and roast in a 325 degree oven until vegetables are caramelized. Add vegetables to tender beans and deglaze roasting pan with water and add the water to the crock pot. Add Water until "soupy". Cook beans and vegetables on high for 2 - 3 hours . Add salt and pepper and basil to taste. 15 minutes prior to serving add the whole wheat elbows to crock pot and cook until tender.
