Garden Harvest Soup

Ingredients
1 Tbsp Olive Oil1 Cup Onions chopped 1 Cup Carrots sliced 4 Cloves Garlic minced1 Cup Red Bell Peppers sliced8 Cups Low Sodium Chicken Broth3 1/2 Cups Diced Tomatoes (fresh or canned un drained)1 Cup Cabbage shredded2 Cups Water 4 Tbsp Fresh Parsley
Directions
Cook onion in oil until transluscent. Add garlic, carrot and bell pepper. Cook until tender. Add all other ingredients (except Parsley) and simer uncovered for 20 minutes. Season to taste with salt, pepper and hot sauce. Top with fresh Parsley.
