Ingredients
2 cups all-purpose flour1 cup sugar1 1/2 tsp baking powder1/2 tsp baking soda2 tblsp shortening1 tbsp grated orange peel3/4 cup orange juice1 egg(well-beaten)1 cup cranberries,chopped1/2 cup walnuts, chopped
Directions
Preheat oven to 350 degrees.
Mix flour,sugar,baking powder,and baking soda.
Beat in orange peel,shortening, orange juice, and egg. Mix till well blended.
Stir in cranberries and nuts. Turn into a 9x5 loaf pan greased on bottom. Bake for 55 min or till
toothpick inserted in middle comes out clean.

    I use the same recipe with one or two changes in preparation. Chopped cranberries are soaked in hot water to soften pre-baking for about 10 minutes, strained and dried off.

    I also bake at 325 degrees F - to allow maximum loaf height. I don't mix nuts in batter, I sprinkle on top for nut crust. - 12/19/11
