Banana Bread Pancakes

Ingredients
2 pouches - Quaker Instant Oatmeal, Weight Control, Banana Bread (or any type/flavor you like)1/2 cup - Egg Beaters (or 2 eggs)2/3 cup - Breakstone's Fat Free Cottage Cheese
Directions
Blend in blender and then cook in a non-stick skillet sprayed with Pam over medium-medium high heat. Makes 8 medium pancakes (about 6") Turn carefully because these pancakes are very tender. May need to cook longer than 'regular' pancakes.


If not using flavored oatmeal you may wish to add a little cinnamon, sweetner and vanilla extract or other flavorings to taste. The nutritional information is based on using Egg Beaters, any substitutions will change the nutritional content.

    These are awesome! Even the picky 7 year old liked them. I used the maple/brown sugar Weight Control oatmeal. I didn't need the cottage cheese since I used 2 very ripe bananas, mashed up, which helped bind them together. I only had to use one egg, also. GREAT and hearty! - 2/20/08

    I used 1 cup of old-fashioned oatmeal, and added a pinch of salt, and about 1/2 tsp. each cinnamon, ginger and cardamom. I aso used a whole cup of egg whites, which made the batter more liquid and did not requie long cooking. Both DH and I loved 'em! - 1/7/08

    These were amazing! Very quick and yummy! I had to substitute 1 cup of regular oatmeal with a mashed banana and the still came out great! I also took the advice to add splenda and cinnamon to the mix. As well as adding a splash of skim milk for I was short on cottage cheese. Very pleased! Wonderful! - 3/9/08

    I was glad it was specified to cook on a low heat or I'd have burned them. Very good, but next time I'll cook on even lower heat because they were doughy inside still. - 8/26/08

    these are fantastic!! Although I use regular oats instead of processed, artificially flavored "oats." I just add a bit of real vanilla and cinnamon for extra flavor. Thanks for the great idea! - 6/27/09

    Just a comment in general. Pancake are a tempermental food. You have to adjust your stove accordingly. If one burns, turn down the heat....if they are too thick add a little liquid (fat free milk). They are truly a trial by fire food item. I'am daring enough to try and make changes as needed. - 7/20/09

    The directions indicate that this makes, "8 medium pancakes (about 6")," which is entirely inaccurate. It makes four 4" pancakes, and that is only if you are being scrupulous in apportioning the batter. - 3/19/09

    The recipe ALWAYS make the reported amt of pancakes for me. Did you use ALL ingredients in the amounts listed? 2 pks oatmeal, 2 large eggs or equiv. in egg substitute and 2/3 cup cottage cheese? Did you blend it so it would be pourable? I don't think there is anyway this could only make 4 - 4".

    Delicious! Will definitly make these again! Made mine with Apples & Cinnamon Low Sugar (some I had on hand) topped it off with fresh sliced bananas. Used a Hand/Blender Mixer instead of the big blender. Easier clean-up. - 3/15/08

    All stoves seem to cook differently, if the pancakes are burning, I would suggest turning the stove down to a lower setting ... allow these to cook slowly so the inside gets cooked before the outside burns. Perhaps low-medium setting would be better than a medium setting.

    I thought these were very good. I was surprised because I tried the oatmeal on its own and I didn't like it, and I don't like fat free cottage cheese. But I loved the pancakes! I put apple sauce on top of them. I also ate two servings(half the recipe) and it made two pancakes. - 1/17/08

    Good,easy and healthy. I used low sugar maple cinn. oatmeal, 2 eggs and 1/3c lf cott. cheese and sub one overripe banana for the bal.of the cottage cheese. Used an electric griddle on 300 deg. Nomally I use 350. The lower temp was perfect. Hubby said they were diff. but good. Will try yogurt next. - 6/28/09
