1 c. chopped onion, 1 c. chopped green pepper, 1T. butter or oleo, 1 can (28oz.) tomatoes w/ liquid, cut up, 1 can (4 oz ) mushroom stems & pieces, drained, 1 can (2-1/4 ) sliced ripe olives, drained, 2 tsp. dried oregano, 1 lb. ground beef, optional 12 oz. spaghetti, cooked & drained, 2 c. (8 oz.) shredded cheddar cheese , 1 can ( 10-3/4 oz) cream of mushroom soup, undiluted 1/4 c. water & 1/4 c. Parmesan cheese
IN lg. skillet, saute onion & gr. pepper in butter till tender. Add tom, mush,olives & oregano. Add gr. beef if desired. Simmer, uncovered, for 10 min. Place 1/2 of the spaghetti in a greased 13- in. x 9-in. x 2-in. baking dish. Top w/ 1/2 the veg.mixture. Sprinkle w/ 1 c. of cheddar cheese. Repeat layers. Mix soup & water until smooth ;pour over the casserole. sprinkle w/ Parmesan cheese. Bake, uncovered, at 350 degrees for 30-35 min. or until heated through. Yield 12 servings
