Ginger Dressing (fat-free, sodium-free)

Ingredients
1/2 apple, grated1/2 red bell pepper, grated1/2 carrot, grated1/2 celery stalk, grated1/2" ginger root, gratedMrs. Dash Herb Onion, to taste1 T. vinegar1 date, minced
Directions
Grind items in grinder or masticating juicer with a blank screen, or grate them, incorporating the juice that occurs during processing into the dressing.

Add a sprinkle of Mrs. Dash andvinegar to grated items.

Serve on top of 2-3 cups of salad greens.

Can be used right away, but it is better if it sits in the refrigerator for a day or two first, to blend the flavors. We like this so well, I usually double the recipe.
