Cleanse your insides with this deliciously healthy light soup.Serves 4-5Clove of garlic, crushedSmall red onion, chopped1 Knob of ginger1 head of broccoli, chopped1/2 head red cabbage cut fine4 cups vegetable stock100g rocketJuice & zest of a lemon⅓ cup miso pastesalt & pepper to taste¼ bunch mint leaves, choppedHeat a large saucepan over medium heat and spray with oil.Sauté garlic, onion and ginger for a few minutes.Add broccoli, cabbage & stock and simmer for 5 minutes or until tender.Add rocket, lemon juice & zest and miso and blend with stick blender until smooth then add contents of pan & blend together.Adjust seasonings and serve with mint leaves & light sour cream to taste.
