Chocolate Chip Healthy Cookie

3/4 c quinoa flakes1/2 c amaranth flour1 c whole wheat pastry flour1/2 c spelt flour1 t baking soda1 1/2 t baking powder1/2 t salt1 t cinnamon***2/3 c olive oil1T pure vanilla1/2 c honey1/2 t liquid stevia2 eggs***1/2 c semi sweet chocolate chips2 T chia seeds
Pre heat oven to 350' F. Mix first section of ingredients (dry) in a medium bowl. Mix second section of ingredients (wet) in a large bowl. Beat until creamy. Combine dry ingredients to wet ingredients. Add chocolate chips and chia seeds. Line cookie sheet with aluminum foil. Drop mix onto cookie sheet 1 T at a time leaving 2-3 inches between cookies. Bake for 10-15 mins or until lightly browned.
