Parsnip & Apple Soup

Ingredients
1 lb apples1 lb parsnips2 cloves garlic2 shallots1 tbsp olive oil1 tsp curry powder1 tsp garam masala0.5 tsp cinnamon0.5 tsp splenda brown sugar2 cups skim milk4 cups vegetable broth
Directions
peel and chop parsnips and apples
saute shallots and garlic in olive oil
add curry powder, garam masala powder (or just double up on the curry powder), cinnamon and brown sugar
add in parsnips and apple, saute
add vegetable broth, simmer until desired
using a hand blender, blend until desired consistency
add milk, do not let the soup come to a boil after adding milk
topping with cheddar cheese adds great flavour
