Lower Carb Chicken Enchiladas

Ingredients
10 LaTortilla Factory low carb high fiber tortillas12 oz. cooked, shredded chicken breast1/4 cup chopped onion1 tsp cumin powder1/4 cup fresh cilantro1.5 cups low fat colby jack- shredded3 Tbsp. butter3 Tbsp. flour2 cups chicken broth1 cup low fat sour cream1 (4 oz) can diced green chillies
Directions
Preheat oven to 350 degrees. Spray a 9x13 pan
Mix chicken, onion, cumin, cilantro and 1/2 cup of the cheese. Warm the tortillas just a bit in the microwave to make them easier to roll. Roll up filling equally in tortillas and place in pan.
In a sauce pan, on medium heat, melt butter then stir in flour and using a whisk to stir, cook 1 minute. Add broth and stir until it is smooth and has thickened a bit. Take the sauce off the fire and then stir in sour cream and chilies. Pour over enchiladas and top with the remaining cheese. Bake 25 min-30min.
