Enchilada sauce, red Las Palmas one ca (3.25 cup)Tortillas, extra thin Mission 10 Cheddar Cheese, grated 2 oz Beans, refried no-fat traditional Rosarita's, 1.5 cup
Quickly fry tortillas on nonstick or seasoned iron frying pan to soften. Roll each with about 2T of refried beans ad a sprinkle (0.2 oz) of sharp cheddar cheese. Pour enchilada sauce over and back until warmed, about 15 minutes at 325 degrees.

Oh, I am so sorry to disappoint you! There is cheddar cheese made from cow milk in these so they aren't vegan. But the vegan "shreds" you can get in QFCs and Safeways would probably work.Get ones that are made for melting. Daiyan is a brand I've tried and liked.
