Penne with Cauliflower

Ingredients
1/4 c olive oil1 garlic clove crushed2 lbs tomatoes, peeled seeded and chopped1 head cauliflower broken into florets1/2 c very hot water2 tbs salt1 lb whole wheat penneblack pepper1/2 c italian parsley1/4 c parm cheese
Directions
6 servings

In a large sauce pan heat olive oil and add garlic. Cook until soften and golden.
Add tomatoes and cook, stirring until they begin to break down.
Add cauliflower and stir well.
Add 1/2 c very hot water and lower heat to medium. Cook 30 minutes or until florets are tender.
Boil penne in salted water until al dente
Drain and add penne to pan with tomatoes and florets. Stir in parsley and pepper to taste. Toss over high heat for 1 minute.
Divide into 6 bowls and top with grated cheese.
