Santa Fe Chicken Fajita Soup

1 pkg (1.4oz) Taco Bell Home Originals Fajita Seasoning Mix1/3 cup water1 lb. boneless, skinless chicken breasts, cut into thin strips4 large cloves garlic, minced2 tbsp. chopped fresh cilantro1 large red onion, chopped1 small green bell pepper, chopped1 pkg. (8oz) Philadelphia Fat Free Cream Cheese, cut into cubes1 lb (16oz) Velveeta Made With 2% Milk Reduced Fat Pasteurized Prepared Cheese Product, cut into 1/2-inch cubes2 cans (14.5oz ea) fat-free, reduced-sodium chicken broth
Combine seasoning mix and water in medium bowl. Add chicken; toss until evenly coated. Cover. Refrigerate at least 30min.
Spray large nonstick saucepan with nonstick cooking spray. Add garlic and cilantro; cook on medium-high heat 1min. Add chicken mixture, onion and peppers; mix well. Cook 10min. or until chicken is cooked trough, stirring frequently.
Add cream cheese, Velveeta and chicken broth; mix well. Reduce heat to medium. Cook until cream cheese and Velveeta are completely melted and chicken mixture is heated through, stirring occasionally.
Serving Size: makes 8 1-cup servings
