Macedonian Tarator

2 medium Cucumbers, peeled and thinly chopped16 oz plain Yogurt, low fat1 TBSP Salt1/2 TBSP Vinegar3 cloves Garlic, minced1.5 oz Walnuts, ground or finely chopped.5 oz Olive Oil1 TBSP Parsley (to garnish)
1) Wash and peel cucumbers. Chop thinly and put into a mixing bowl, then sprinkle with Salt.
2) Put Yogurt and garlic into mixing bowl. Mix well. Optionally add oil and/or Walnuts.
3) Place mixture in deep serving bowl and garnish with Parsley.
4) Refrigerate and serve cold.
