1/4 cup cold pressed extra virgin olive oil8 stalks celery, sliced (about 4 cups)1/2 small onion, chopped1 small fennel bulb (approx. 2 cups chopped)2 garlic cloves, sliced1/2 teaspoon chopped peeled fresh ginger1 large bunch watercress, trimmed (about 4 cups)2 Tbsp unpasteurized miso4 cups water
Directions
