Breakfast Rice Pudding with Dried Fruit.

Ingredients
Trader Joe's Unsweetened Coconut Milk, 2 cup 1 cup rice milk2.5 cups waterBrown Rice, medium grain, 2 cup Honey, 1 tbsp Salt, .75 tspTrader Joe's Turbinado Sugar - Raw Cane Sugar, 3 tsp Almond, Raw, Sliced, 0.25 cup Cinnamon, ground, 1 tspDried Cherries, .25 cupRaisins, .5 cup, packed Vanilla Extract, 1 tsp *Almond Extract, .5 tsp
Directions
Rinse rice until water runs clear, add coconut milk, rice milk, water, rice, almonds, salt, honey, sugar, cinnamon, and 3 cardamom pods if you have them.

Bring to simmer, cover and cook for 30 minutes.

Add dried fruit, cover, and cook another 30 minutes, until liquid has been absorbed.

Remove from heat, add vanilla and almond extract.
