Ingredients
1 Thomas English Muffin (Light / Multigrain)2 poached eggs4 thin tomato slices2 thin slices of red onion1 T capers2 oz. Alaskan Smoked SalmonSalt & pepper to tastePaprika for color on top of egg
Directions
Poach eggs (less than 4 min to ensure yolks are creamy)
Toast muffins (crispy is good)
Layer salmon, onion slice, tomato and poached egg onto muffin. Add salt / pepper / paprika. Sprinkle capers.
