Lemon Fish

Ingredients
4 cod fillets1 (16-oz.) package frozen stir-fry vegetablesSalt and pepper, to taste1 to 2 whole lemons, juiced1 teaspoon dried rosemary1 cup tomato juice3 tablespoons grated Parmesan cheese
Directions
Preheat oven to 400 degrees. Line a baking pan with aluminum foil wrap; place fish in pan and cover with
vegetables; sprinkle with salt and pepper, lemon juice and rosemary; pour tomato juice over all. Bake for 20 minutes or until fish flakes easily when tested with a fork. Sprinkle with Parmesan cheese during the last five minutes of cooking time.
