Easy Single-Serve Pumpkin Chocolate Chip Cupcake

Ingredients
3 tbsp whole wheat flour1 tbsp canned pure pumpkin (not pie filling!)1 pinch cinnamon or pumpkin pie spice1/4 tsp baking powder1 pinch salt1/2 tbsp chocolate chips (or more for taste!)1-2 sweetener packets (I use the pink stuff)1 tbsp + 1 tsp milk (I use non-fat)1/4 tsp vanilla extract
Directions
Place all ingredients in a microwave-safe coffee mug and mix well. Microwave for 1 minute and enjoy! Optional: top with whipped cream.

    Hi! Wanted to like it as it is so easy. I followed exactly and it turned out like a glob of hot dough with chocolate chips etc... Not very muffin like in texture or taste. Also dont use sweetener packets, so didnt know how much sugar to use. Is this supposed to taste like a real muffin? - 3/23/14

    Tastes good, but has the tough texture typical of a microwave cake.
    I used a tablespoon (10 g) of raisins instead of chocolate chips (preference) and used brown sugar (about 3/4 teaspoon). 102 cal, 0 fat, 3 protein, 24 carbs.
    Bottom line: this is a tasty, healthy option when a sweets craving hit - 9/12/15

    To bmimmie and samantha - I like to use my plastic ice cube tray to freeze portions agand then dump easily into a "ziploc bag. Just know what the amount is per cube. Works great! - 7/28/15

    To Samanthas'day: separate in, let's say, 1/4 cup portions, (or 1tbsp portions for future use in this recipe), and freeze in small ziplok bags. It is safe for many months in the freezer. When ready to cook your favorite recipe of muffins, cake or pie,just thaw in microwave. - 6/20/15
