2 1/2 cups of Oats1 1/2 cups of Walnuts and Almonds chopped coarse1/3 c. flour1/2 c dried cranberries1/2 c raisins1 egg1/3 c brown sugar packed3 tblsp veg oil1/2 c. honey1 tsp cinnamon(You can add 1 cup of other dry ingredients if desired: low fat granola or other cereal, addtl nuts, coconut, etc)
Preheat oven to 325. Spray large 11x15 pan with non-fat cooking spray. Chop nuts to desired consistency. Add all dry ingredients except sugar. In small bowl stir together egg, brown sugar, oil, honey, and cinnamon. Stir liquid into granola mixture, stirring until well coated. Place into greased pan. Bake for 60 minutes or until desired color, stir gently each 15 minutes. Leave in larger chunks. Cool in pan. The mixture will crisp as it cools and break into desired consistency for use.
