2 cups cooked brown rice and mahoghany and wild rice mixture2 tablespoons pine nuts1 large tomato, seeded1 yellow bell pepper1tsp. Basil8 artichoke hearts3 cloves garlic1 tbl. Olive oilCayenne pepper to tasteSalt to taste
Cook brown rice according to instructions on pkg. add oil to pan and put in chopped bell pepper cook till tender. Add artichoke hearts pine nuts, garlic and basil. Cooked till pine nuts start to turn brown. Add tomatoes and brown rice, let flavors mingle for a few min. Add salt and cayenne to taste.
