Slow Cooker Shrimp Jambalaya

Ingredients

1 lb boneless skinless chicken breasts, cut into 1 in pieces.1/2 lb andouille sausage, or chorizo, diced1 (28 oz) can diced tomatoes1 medium onion, chopped1 green bell pepper, seeded and chopped1 stalk celery, chopped1 cup fat free or reduced sodium chicken broth2 tsp dried oregano2 tsp cajun or creole seasoning1 tsp hot sauce or more depending on your tastebuds2 bay leaves1/2 tsp dried thyme1 lb frozen, peeled and cooked shrimp, thawedcooked rice
In a slow cooker, combine chicken, sausage, tomatoes, onion, green pepper, celery and chicken broth. Stir in oregano, cajun seasoning, hot sauce, bay leaves and thyme.
Cover and cook on LOW for 7 hours or HIGH for 3 hours. Stir in the thawed shrimp, over and cook until the shrimp is heated through, about 5 to 10 minutes. Discard bay leaves and spoon mixture over cooked rice.
TIP: Sometimes I make this in the crockpot without the shrimp, store it for a day or two. You can even make this ahead of time, store in freezer and warm it through and add the shrimp at the end.

Tip: The Kroger store has frozen veges with all ingredients including with or without okra for only $1.19 in frozen vege isle(saves all that chopping and crying). Also, I added an additional can of whole kernal corn(low sodium) and let shrimp marinate in soy sauce before adding. FABULOUS!!!! - 11/25/09

Amazing. My husband and my 2 yr old loved it. It tastes amazing. Only difference I made was I added a bit more andouille, used tony chacheres (sp?) cajun seasoning and omitted the hot sauce. Then we added it over rice...absolutely delicious, even when I had to double the recipe for houseguests. - 6/3/09
