Kidney Bean Chocolate cookies

1 cup cooked white kidney beans2 tbsp oat bran or wheat bran1/2 cup + 4 tbsp skim milk2/3 cup Becel lite margarine1 1/2 cup whole wheat flour1 cup sugar substitute like Splenda2/3 cup cocoa2 eggs4 Tsp vanilla extract1 Tsp baking soda1/2 cup unsweetened applesaucePreheat oven to 375.
Put beans, bran, and 4 tbsp of skim milk in a food processor and puree until well blended.
Put margarine, flour, sugar substitute, bean puree, cocoa, remaining milk, eggs, vanilla and baking soda in a bowl and beat until combined.
Preheat the oven to 375. Drop the batter by the tablespoon full onto a baking sheet lined with parchment paper.
Bake until firm to touch, about 10 minutes for cookies, 18 - 20 minutes for muffins. If cooking muffins, test by inserting a toothpick. Let cool on a rack.
Serving Size: Makes 36 cookies, or you can make 18 muffins :)
