Kiki's Delicious Cranberry and Pear Relish

Ingredients
16 oz bag fresh cranberries 2/3 cup raw sugar 1 tbsp freshly ground ginger 1 tsp freshly ground cloves 1-1/2 cups fresh pomegranate juice 1 cup raisins 2 pears, cored and diced (med. sized) 1 orange (juice & pulp) small to med. sized1 tsp salt
Directions
Put raisins in small bowl of hot water until plumped.
In saucepan, combine the cranberries, sugar, freshly ground ginger, freshly ground cloves, fresh pomegranate juice, and 2 cups of water and bring to boil then simmer for 30 minutes.
Stir in the plumped raisins, diced pears, and orange juice and pulp.
Continue simmering for 45 minutes, or until thick.
Remove from heat and let cool.

    This was awesome! My whole family loved it. I used splenda instead of sugar, added some pomegranate seeds, and the zest of two oranges. I even dumped in the rind of one orange, and it was delicious after being boiled in the cranberry sauce. My family has already requested it again for next year. - 11/30/09
