Green Eggs no Ham

Ingredients
1 slice large onion, diced2 tsp minced garlic1/4 med red bell pepper, diced1/2 cup frozen or fresh spinach1 large egg1 oz. (1/4 cup) Mozzarella (part skim) cheese
Directions
This recipe makes one large serving.

Spray skillet with non-stick spray
Add onions and minced garlic - saute for 2 mins
Add pepper and saute for 2 more minutes
Add spinach and a small amount of water
Cover and cook for 2 minutes
Scrape spinach mixture to the side and cook egg, stirring constantly until set
Mix everything together and sprinkle with cheese
