Whole Wheat Good Morning Blueberry Muffins

1 cup whole wheat flour1 cup all-purpose flour, unbleached2/3 cup brown sugar1 cup applesauce, unsweetened1 tsp. baking soda1/4 tsp. salt1 cup. wild blueberries (Wymans or similar) 1 large egg, beaten1 tsp. vanilla2 T. safflower oil 1 cup 1% milk1/4 cup Dannon Light & Fit yogurt, vanilla
Preheat oven to 325 degrees. Combine all dry ingredients (flours, sugar, baking soda, and salt) in a bowl. In a separate bowl, whisk the wet ingredients (applesauce, milk, beaten egg, oil, yogurt) together. Fold the wet ingredients into dry ingredients with a whisk and stir as few times as possible but make sure everything is well combined. Bake at 325 degrees 25 minutes or until fork or toothpick comes out clear. You can also dust top with turbinado sugar, but that is extra calories (but so beautiful and yummy!!)
