Cheesy Ham Chowder

Ingredients
1 1/2 pounds bacon, diced1 large red onion, chopped1 c diced carrots3 T flour3 c milk1 can (14oz) chicken broth 100% Fat Free6 medium potatoes, diced1 can (15 1/4 oz) whole kernel corn, drained or 1 (16 oz) bag frozen kernel cornpepper to taste 3 c (12 oz) shredded cheddar cheese2 c cubed fully cooked ham
Directions
In a large skillet, cook bacon over medium heat until crisp. Remove to paper towels to drain. Or in a large saucepan, heat bacon grease.

In the drippings, sauté onion and carrots until tender. Stir in flour until blended. Gradually add milk and broth. Bring to a boil; cook and stir for 2 minutes or until thickened. Add the potatoes, corn, and pepper. Reduce heat, simmer, uncovered, for 20 minutes or until potatoes are tender. Add ham and let soup cool for a little while and then add cheese, melted serve.
Sprinkle bacon in bowls only.

    I've made this recipe a few times and i've made a few adjustments, i used turkey bacon (still great flavor), used sharp cheese (more flavor-less calories) and shredded the carrots. My husband loves this recipe! Great chowder!! - 12/7/09
