Banana Oatmeal Choc Chip Vi-Cups

Ingredients

3 mashed bananas (the more ripe the better)1 cup unsweetened vanilla almond milk1/3 c egg whites (equivalent of 2 lg eggs)1 Tbsp Baking Powder3 cups Old fashion oats1 tsp vanilla extract (optional)3 Tbsp mini semi-sweet chocolate chips3 rounded scoops Visalus Vi-Shape shake mix
Preheat oven to 375 degrees
Mix all ingredients together
Spray a muffin pan with non-stick cooking spray (or use liners)
Divide batter among 12 muffin cups (They will be almost full)
Bake 20-30 minutes or until the edges just start to brown and muffins are firm to the touch
