Picante Chicken

Ingredients
1 lb. boneless chicken breast, cut into bite-sized pieces1/2 packet taco seasoning2 T canola oil1 c. picante sauce (or chunky-style salsa)1/3 c. peach preserves4 c. white rice
Directions
Heat olive oil in a large skillet over medium heat. Add chicken to skillet and sprinkle with taco seasoning.Cook until chicken turns white, stirring occasionally. Add picante and preserves to skillet. Lower heat, cover and simmer for 15-20 minutes. Serve over cooked rice. Serves 4.
