Citrus Tilapia

Ingredients
4 Fillets of Tilapia (frozen is fine)2 Lemons1 OrangesSalt and Pepper to taste
Directions
On a baking sheet, prepare a pouch of aluminum foil (or use one of the Reynolds Wrap foil bags). Place fish on/in the foil. Sprinkle with salt and pepper. Slice an orange and place 2 slices each on top of the fish. Squeeze the rest of the orange over and around the fish. Slice a lemon and place 2 slices each on top of the fish. Squeeze the rest of the lemon over and around the fish.

Seal the foil/foil bag tightly so steam won't escape. Bake in a 400 degree oven for about 15-20 minutes or until fish is steamed through. Serve with lemon wedges.

NOTE: For a change, use the lemons but add chopped red and green bell peppers instead of oranges.

    this is really good - I squeezed the lemon juice and orange juices into a small cup, added a bit of minced ginger and poured that over the fish. We will have this again! - 2/3/09
