Vegetarian Lasagna -- Nikki's

Ingredients
Kroger Whole Wheat Lasagna pasta3 cups of spaghetti sauce3 cups of fat free cottage cheese1 cup of Parmesan cheese1 Egg1 Eggplant1-2 summer squash 3 cups fresh mushrooms2-3 cups spinach1/2 cup shredded carrots2-4 garlic cloves
Directions
Roast veggies for 20 mins at 350 F.
Slightly cook whole wheat pasta in boiling water for 10 minutes .
Mix cottage cheese, egg and Parmesan cheese together and drop by teaspoon onto lasagna layers.
Layer pasta, sauce, veggies, and cheese mix ending with veggies and sauce on top. in a 9 x 12 baking dish. Bake at 350 for 1 hour. (Can cover the dish with foil if it looks to be turning too brown around the edges.
