Potato Salad

2 White Potatoes (5.3 oz. each)1/4 cup chopped Cucumber (with peel)1/4 cup chopped Onion1/4 cup chopped Celery2 tbsp. Relish (I used Mt. Olive Hotdog Relish)2 tbsp. Light Mayo2 tsp. Yellow Mustard1 tsp. Salt (or to taste)1 tsp. Ground Black Pepper (or to taste)
-Microwave your potatoes for 3 minutes or until just cooked.
-Dice potatoes and place in large mixing bowl.
-Chop cucumber, onion, and celery to uniform size (smaller than your potato pieces) and add to bowl along with potatoes.
-Add relish, light mayo, and yellow mustard to other ingredients in mixing bowl and combine well.
-Salt and pepper to taste, and mix one last time.
Serving size is 1/2 cup... enjoy!
