Cut up and clean your pork to remove the bone/fat. Cut it into bite size for even cooking, set aside. Put oil in pan and cook up onion and pepper until cooked through, set aside. In the same oil, cook pork. Add in the peppers, coconut milk, and the curry powder once pork is cooked. It will be runny so the longer you let it simmer, the thicker the sauce will get. AMAZING!!
