1 lb. beef cubes3 tbsp minute tapioca, dry2 cups celery2 small onions4 potatoes (4 - 5 oz each)2 cups carrots16 oz reduced sodium V-8 juicepepper, parsley flakes, garlic powder and oregano - to taste.
Serves 8. Preheat ove to 300 degrees.
Cut vegetables into 1 inch chunks. Layer meat and vegetables in a 9 X 13 pan. Sprinkle with tapioca and seasonings (to suit your taste). Cover tightly with foil and bake in a 300 degree oven for 3 hours.
