Everyday Paleo Green Curry

Ingredients
Chicken breast (as much as you have on hand, but a pound is good)2 carrots, chopped1/2 head of cabbage, shredded2 cups mushrooms, sliced1 can of light coconut milk1/2 cup chicken broth3 tbsp green curry paste1 tbsp fish sauce1 tbso coconut aminoes (I skip soy)
Directions
1. combine coconut milk and curry paste and bring to a boil in a large sauce pan. Turn heat to low and simmer for about 5 minutes.
2. add chicken, carrots, broth, fish sauce, and coconut aminoes. Mix well and cook for 10 minutes.
3. Add cabbage and mushrooms and cook for about another 5 mintues.

Serving Size: makes 4 servings
