Sea bass with orange and roast vegetables

4 sea bass filets2 tomatoes100g mangetouts1 onion medium3 beetroots10 new potatoes1 inch ginger root2 cloves garlic10 g butterSprinkle of olive oilSeasoning to taste
In a baking dish, layer orange and lime slices, fish filets, onions tomatoes ginger and garlic and scatter knobs of butter. Cover with foil and let it cook in oven at 190 C for about 25-30 mins or until cooked. Let the fish crisp up for the last few minutes by removing the foil.
In a separate dish roast the mangetouts and beetroot. Boil or bake the potatoes, break it up with a fork and season with salt, pepper and a little butter if desired.
Serve warm.
