Slow Cooker Southwest Chicken

Ingredients
1 1/2 lb of boneless skinless chicken breast cut into large pieces2 cans corn, drained1 can black beans rinsed and drained16oz salsa
Directions
Add corn, black beans, and 4 oz of salsa to slow cooker. add chicken and pur remaining salsa on top. Cooks for 3-4 hours on high or 6 hours on low.

    I got this recipe at a WW meeting a few years ago...they use one can of corn. Also, that recipe turned off the cooker 1/2 hr before serving, add an 8oz pkg of fat free cream cheese and allow to soften. Stir it in and serve. I serve with brown rice, and dish the chicken over it. Very Very good. - 10/13/10

    I make something similar with this variation:
    15 min before serving, remove chicken breasts to a plate and stir in 1 cup of dry Minute Rice.
    Replace chicken breasts and sprinkle 1/2 cup of shredded cheddar cheese over chicken.
    Cover & cook an additional 15 min until rice absorbs juices. Yummy! - 1/30/09

    This was really good. My husband and I served it over 1 cup cooked rice. Obviously, this increased the total calories but it made an excellent meal under 500 cal. It was light but very filling. I used very hot salsa so it had a spicy kick. We will make this again. - 7/20/10

    I used two chicken breasts, substituted pinto beans, and one cup of salsa. I put one can of corn (drained) in before I wanted to serve so it would keep its flavor and nutrients. It was fantastic! Thank you. - 10/26/11
