3 cups whole wheat flour4 cups wheat bran1 cup rolled oats1/2 cup wheat germ1/2 cup coconut2 tbsp baking powder2 tbsp baking soda1 tbsp salt4 cups skim milk4 large eggs2/3 cup canola oilvanilla to tastsMix dry ingredients and wet ingredients separately. Add wet ingredients of the dry but do not over mix. Bake at 400 for 18 to 20 mins. Adjust time for smaller muffins. Any dried fruits such as dates, apricots, cranberries, raisins, figs or apples go very well with these muffins. Spices such as cinnamon and nutmeg also accompany this well. Once in a while, I will also add a few tablespoons of molasses as well.
Makes 24 large muffins.
