3 C Pumpkin (puree/mashed)1/2 C 10% Cream100 gram Marble No Name Cheese1-2 Chives - finely chopped5 Eggs - separatedSpices (I used pumpkin spice, nutmeg and Epicure No salt Pepper and lime)
Prep the squash or pumpkin. Mix the pumpkin, cream, and spice. Add the egg yolks and whisk together. Fold in cheese and chives.
In a separate bowl, whisk the egg whites until stiff peaks form but still moist.
Add to the pumpkin mix 1/3 at the time.
Scrape into a souffle dish (8X12) and bake at 400F for 40min.
Make 8 servings.
