Jamie's Salmon Omelette

2.1 oz Grilled Salmon Chopped1 pat Butter1 tsp Olive Oil1Tbsp Chopped Onion1 Large Egg3 Tbsp Egg Beaters1 dash Pepper1 dash Garlic Salt1/4 C. Mozzarella Low-moisture part skim
Bring 9" Non-stick Skillet to medium-High Heat
In small bowl mix egg and eggbeaters
1) Add Butter and Olive Oil, then add onions, salmon, garlic salt and pepper then saute.
2) Add eggs and let cook 30 seconds. Run heat-resistant rubber spatula under eggs and lift while tilting skillet so runny eggs can flow under cooked eggs. Repeat going around the skillet until most eggs are cooked. Let cook 15 seconds the flip/turn.
3) Add 1/2 Mozzarella. Fold out onto Plate and top with remaining Cheese. Microwave 30 seconds to cook any runny eggs and melt cheese.
