Salmon Nuggets

Ingredients
14.2 oz of Pink Salmon2 Egg Whites4 Slices Whole Wheat Bread1/2 c Mild Cheddar (shredded)1 tsp Chili Powder1 tsp dried dillweed1/4 cup dehydrated onions (adjust for flavor)1/4 tsp salt (adjust for flavor)2 Tbsp Extra Virgin Olive Oil
Directions
Mix all dry ingedients in a large bowl
Mix in salmon
Mix egg whites
Heat EVOO at medium heat in a large skillet.
Scoop mixture out in 1.5 oz scoop (appox. 1 tbsp) and slightly flatten.
Put into hot oil and let cook for 4-6 minutes or until desired browning has occured. Flip and cook for another 4-6 minutes.
Repeat with rest of mixture.

Yields approximately 28 nuggets (7 nuggets/ serving)
