Mexican Chicken Breast

Ingredients
1 package taco seasoning 4 (4 oz) boneless, skinless chicken breasts1 cup salsa1/4 cup reduced-fat sour cream
Directions
Put the chicken and taco seasoning in Ziploc bag; shake to coat well.
Place the chicken in a casserole dish coated with nonstick cooking spray.
Bake in 375 F oven for 30 minutes.
Top with salsa five minutes before done.
Garnish with sour cream just before serving.

    You can cut WAY back on sodium on this recipe if you make your own "taco seasoning." Chili powder, onion powder, garlic powder, cumin and maybe a little thyme. Dash or pinch of salt if you wish, but the flavors of the seasonings allow you to skip salt. If you like spicy, add a little hot sauce too. - 1/29/09

    This was great! Very easy. We keep a big jar of taco seasoning on hand, so just used a little, not too salty at all. Used black bean and corn salsa, and just a pinch of shredded 2% mexican cheese on top, and a dollop of fat free sour cream. One of my new favorites for chicken!! - 1/30/09

    Delicious! Instead of Sour Cream I used some Pepper Jack Cheese, tossed it on top when the chicken was just about done and let it melt then put the salsa ontop. To me the salsa is what added the best flavor! Thank you for sharing! - 7/19/09

    YUM!! I make this but change it up a bit by putting it into the crockpot, using chicken breast, a can of chicken broth and taco seasoning.. We serve it with salad or on tacos... So simple! Just shred w/fork and serve with toppings. Thanks for sharing! - 6/24/08

    i liked it! and for those who thin the sodium is too high i bought the reduced sodium (its right with all the packs of taco seasonings)...i love how the recipe is simple and easy....i wrapped it in a fat free wrap and added some cooked vegtables (onions,bellpeppers) to it,,,pretty good ! - 2/28/09

    I had everything except the taco seasoning, so I just googled a "recipe" to mix my own. I had all the spices. I was only making one serving, so I just put enough in the bag to make sure the chicken was coated well.

    Turned out delicious! Subbed greek yogurt for the sour cream and added cheese. Yum - 6/20/11

    great flavor!I have no issue with salt so it was fine for us. I weigh breast before & allow for cook off for my weight of 4 ounces (raw) . I have also made this with pounding the breast & rolling up with fresh salsa & ff cheese, then rolling in the seasons,yummy.But common sense is half of cooking! - 4/25/09

    Made this for dinner this evening and it was really good. We will definately be making this on a regular basis. We had with spainish rice and a salad, but will add a veggie next time we make it. Maybe some corn with blackbeans. - 5/31/11

    Nice idea, we liked it a lot. We turned it into more of a taco "parm" with salsa though. Sliced the chicken thinner, and made a mixture of low sodium taco seasoning mixed with Panko breadcrumbs, saute' in olive oil. Pop in oven with salsa, added low fat cheese. Never would have thought of this recip - 11/14/10

    My boyfriend and I loved this! We added wholegrain rice and guacamole. The small grocery store nearby didn't have low fat/reduced fat sour cream, though. This is awesome; we are definitely going to make it again. :D - 5/27/08

    **YUM.** I used Mrs. Dash Taco seasoning; no salt added, and Greek yogurt for sour cream because that's what I had. I also used the habanero Rotel, because I had that, instead of salsa. This is going on regular rotation here! :-) - 7/24/19
