250 g shrimp, thwed1/2 cup couscous (dry)1 medium Zucchini, chopped1 medium carrot, chopped1 medium tomato, chopped2 minced garlic cloves1 cup vegetable broth
In a skillet, add olive oil, shrimps and garlic, stir fry briefly over medium heat, add zucchinni, carrots and tomato.Simmer for about 3-5 minutes to cook through, add vegetable broth, take skillet of heat and add coucous. Let it sit for a few minutes untill coucous is done, fluff with a fork and enjoy!
