Pumpkin Muffins with Applesauce and Protein

1 1/2 cups whole wheat flour1 cup oats1/2 cup brown sugar1 tbsp. baking powder1.5 tsp. cinnamon1 cup canned pumpkin3/4 cup nonfat milk1 egg slightly beaten1/3 cup applesauce4 oz. soy protein powder
Preheat oven to 375.
Mix all dry ingredients together. Add pumpkin, milk, applesauce, and egg. Mix lightly, but do not overmix.
Pour into 18 muffins. Bake for 15-20 minutes, or until toothpick inserted in the middle comes out clean.
Store in an airtight container, or freeze individually, if desired.
