Cod with Lime & Coconut

1 1/4 lb Cod FilletsTo Taste Salt and Pepper1 1/2 tsp Lime Juice1 Tbsp Olive Oil1 1/2 Cup Chopped Leek2 Garlic Cloves, Minced1/2 Cup Coconut Milk2 1/2 Tbsp Lime Juice1/3 Cup Chopped Fresh Cilantro
1. Preheat oven to 350 degrees. Sprinkle 1 1/4 lb cod fillets with salt and pepper; place in 11x7x2 inch glass baking dish. Drizzle with 1 1/2 tsp. lime juice. Heat 1 Tbsp olive oil in large skillet over medium heat. Add 1 1/2 cup chopped leek (white and pale green parts only; about 1 large) and 2 garlic cloves, minced; saute 7 minutes. Add 1/2 cup coconut milk and 2 1/2 Tbsp lime juice; boil until thick, about 4 minutes. Spoon sauce over fish. Bake until fish is just opaque in center, about 20 minutes. Transfer to platter. Whisk juices in baking dish. Spoon around fish; top with 1/3 cup chopped fresh cilantro.
